Radish Cucumber Salad on Watercress with Oranges

 

What you’ll need:

1 cucumber, peeled

10-14 radishes, trimmed and sliced

½ cup of slivered red onion

1 cup plain yogurt

¼ cup of sour cream

3 tablespoons of chopped mint

Salt and pepper to taste

1 bunch of watercress, cleaned, thick stems removed

2 oranges peeled and sectioned

 

Directions:

Cut the cucumber in half lengthwise, scoop out the seeds, and slice the cucumber halves.  Combine cucumbers, radishes, and onion in a bowl.  Mix yogurt, sour cream, and mint.  Toss with radish mixture, season with salt and pepper to taste.  Make a bed of the watercress on a platter, mound the radish salad on top, and garnish with orange segments.
