Red Skin Potato Salad

 

What you’ll need:

Red Potatoes

Thick Sliced Bacon

Green Onions, chopped

Sour Cream

Cheddar Cheese

Salt and Pepper

Vinegar (optional)

Sugar (optional)

 

Recipe:

Bring a pot of salted water to a boil

Boil potatoes until they are tender, but still firm

Drain potatoes and allow to cool

Cook bacon in a skillet

When crispy, pat dry on paper towel and crumble

Cut cooled potatoes into bite sized pieces

Chop green onion finely

Add potatoes, bacon, and onion to a mixing bowl with desired amount of sour cream for dressing

Add vinegar to taste if you want to be tangy

Add sugar to taste if you want it to be sweet

Finish with grated cheddar cheese on top
