Southern Style Fried Okra
What you’ll need
About 1 cup of canola or peanut oil for frying
4-5 ounces of okra, cut crosswise in ½ inch slices
¼ cup of buttermilk
½ cup of cornmeal
½ teaspoon of baking powder
¼ teaspoon of cayenne (optional)
½ teaspoon of kosher salt
¼ teaspoon of freshly ground black pepper
½ teaspoon of sugar
Pour about an inch of oil into a medium pot and heat over medium-high heat until the temperature reaches 375 degrees.
Meanwhile, place the sliced okra in a medium bowl and stir in the buttermilk. In another medium bowl, whisk together the cornmeal, baking powder, cayenne (optional), salt, pepper, and sugar. Using a slotted spoon, lift the okra from the buttermilk and place it into the corn meal mixture. Use your fingers to toss the okra so it is well coated. When the oil is hot, lift the okra a few pieces at a time, using your hands or a slotted spoon. Gently shake the okra over the bowl, letting the extra cornmeal fall back into the bowl. Place the okra gently into a bowl, and fry until golden brown and crisp, 4-5 minutes. Briefly drain on a towel, and serve!
