Stewed Summer Squash and Tomatoes


What you’ll need:

2 tablespoons olive or vegetable oil
1 medium onion
4 garlic cloves
1 pound of squash (yellow or green)
28 oz can diced tomatoes
salt and pepper to taste
3 to 4 tablespoons chopped basil


Coarsely chop onion
Cut squash in half, then slice
Heat oil in pot over medium heat.  Add onion and cook until translucent
Mince garlic, add to pot and cook for 1 minute 
Add squash, tomatoes with the juice, and salt and pepper to taste.
Cook for 10-15 minutes until squash is tender 
Add basil and serve
